(Serves 3 - Bagged Stovetop) This was a favorite, popular with my mother’s crowd back in the 60s (and we make it from scratch here in our kitchen of course!) Chunks of chicken in a creamy sauce with fresh Organic mushrooms, Organic scallions, and pimentos. Serve over rice provided for a “comfort food” type of meal.

COOKING INSTRUCTIONS: RICE – Bring two cups of water to boil in a pot with a tight fitting lid. Add rice, 1 tsp butter and 1/2 tsp salt. Bring back to boil, cover and lower heat. Cook 20 minutes or until water is absorbed. Take off burner and let rest with lid on for a few minutes. Chicken Mixture – Pour contents of chicken baggie into sauce pan. Add pimentos if desired. Cook stirring frequently over low heat until hot and bubbly. Watch closely, as not to burn sauce on bottom of pan. Spoon over hot cooked rice. Serve with Sweet Potato Biscuits and Herbed Squash Saute.
