Spinach & mushrooms go so well together! This has become a house morning favorite! I unwrap this bake and put it in the oven frozen (yes, it thaws in time to cook) the night before. I program my oven to turn on @ 5am and it cooks while we're waking up. We start our day on a positive, healthy note.
