I tried this on the 28-day paleo plan, but everyone should try it! This is a perfect breakfast. I can get 4-5 servings from this and it is just as good when reheated. Excellent!

Although I love all of the great ingredients, I wasn't a fan. Even though I cooked longer than suggested, the pork looked undercooked and the color was very unappealing. I also didn't care for the texture. My husband ate a small piece, but the rest went uneaten.

Spinach & mushrooms go so well together! This has become a house morning favorite! I unwrap this bake and put it in the oven frozen (yes, it thaws in time to cook) the night before. I program my oven to turn on @ 5am and it cooks while we're waking up. We start our day on a positive, healthy note.

Our Paleo breakfast bake did not look like the picture. It looked black and dark from all of the spinach, not at all yellow to show the presence of eggs. The pork was still pink after baking for 1 hr and 30 minutes. This item really isn't my cup of tea.
